I had been wanting to make a cheese bread with onion and the day was cool for having an oven on so I did it. Came out the best ever. Ingredients: Philippe's Bread water yeast sucanat olive oil cheddar cheese onion First, I added 1 Tbsp yeast to 1/2 cup warm water and a 1/2 tsp sweetener. Let sit 5 minutes. I then made a sponge via Tassajara bread book To make a sponge – you add more water (1 Cup) add flour (1-1 1/2 cups) and stir 50-100X. Let rise 1 hour. Next you add salt and oil. I added 1 tsp salt and 1 – 2 Tbsp oil. You then blend gently – not by cutting across the dough but by spooning around bowl until mixed. I then added 1-cup cheese and approx. ½ caramelized onion. Added more flour now- maybe 2-3 cups to make a nice dough to knead and then let that rise 45 minutes. After this time, I punched the dough down and added a little more flour so that it was not sticky. I set my oven at 325 because I have an electric oven, otherwise set to 350. I formed the dough into a round and covered with an egg wash. Baked it for 40 minutes and voila! Amazing!! Had some this morning the day after – still very moist. Enjoy...
