Continuing my reading into the book Eating on the Wildside and learning about the nutrition in carrots.
Did you know that cooking carrots increases their antioxidant value and that the deeper the colors (purple, purple-orange) of carrots - the more nutritious! Eat fat with your carrots to increase the beta-carotene - and cook them whole and then slice for more nutrients. Store carrots away from fruits and vegetables because the veggies and fruits produce a gas that causes the carrots to be bitter! Carrots can be stored for weeks without losing value.
